Edward Aiken

executive CHEF

"My dad used to wake me up early Saturday mornings. We would make scratch biscuits and sausage gravy before my mom and sisters woke up. That was the first dish I learned how to make and it is still very special to me. My dad always would find a way to get me to try things I wouldn't normally eat - frog legs, oysters, sardines. In the afternoons the kitchen was my mom's domain, from chicken and dumplings to stewed tomatoes and okra, and collards; I watched, participated and tasted everything they cooked.

Later in my early teens I got my first job as a dishwasher, in a Mexican restaurant. I loved to watch and learn about all the dishes I had never seen and couldn't pronounce half of them. One day a line cook didn't show up for his shift so I jumped at the opportunity to try my hand at the art of cooking professionally. I did well, I guess good enough to be put on the line full time. No more dishwashing for me. I worked at a few more restaurants and some other trades before I started college for computer science, but even after I received my degree and went out into the world, I couldn't get cooking out of my blood. I started working and traveling, finding the best chefs in town to work under. All were great chefs in their own right with different personalities, temperaments, and unique sets of skills to pass on to me. From FL to LA, TX to CA, NY to NC I searched for technique and studied my craft day and night. And now here in KY I look forward to sharing my passion and knowledge with Hopkinsville & the surrounding areas."

"The daughter of retired Col. Paul Calhoun, I have lived and traveled from the Middle East to Europe. I have been in sales and marketing for over 40 years. I enjoy people and helping them in their need. I believe Hopkinsville will enjoy having a fine dining restaurant and our goal is to bring the 'fine dining with Southern charm' experience to this area. We look forward to continually being an active supporter of this community."

KAYLA MCCLURE

I can almost smell the salt in the air when I take a bite but I open my eyes and realize I am in the heart of America, surrounded by the freshest produce, livestock, and dairy available. The Black Patch menu is a culmination of my travels and the influences Kentucky has had on me. It is a marriage of the ocean, and the rich farm lands that surround me. Bringing the earth and sea together on a single horizon. Let us share some smoke and salt with you.
